Flat as a Pancake

Today was a somewhat uneventful day. 

Woke up.  Walked Pepsi. Drove to work. 

Hate driving but had an appointment after work that I could not walk to.

Worked. Went to appointment. Came home. Glad to be home!

As promised I wanted to share yet another energy bar recipe (yes I am obsessed).  This time I got it from this lovely lady.

She tweaked her recipe and I tweaked it further.

Started with the good stuff:

1 Ripe Banana (mashed)
1.5 c Oats
1/2 c Shredded Unsweetened Coconut
1/2 c Raisins
1/2 c Agave
1/2 c Raw Almond Butter
2 Tbsp Flax Meal
1.5 Tsp Cinnamon
1 Tsp Vanilla Extract

Mixed it all up and put it in the pan:

Instead of freezing the bars for an hour, I baked them for 30 minutes at 400 degrees.  The house smelled divine!

They turned out delicious BUT are falling apart.  I wonder if I should add an egg white to help them stay together?

Any recommendations?

They are still quite good and package up nicely.

Speaking of appointment, yes it was that time again to get my you-know-whats flattened out like a pancake in the name of breast cancer prevention.

I only mention it on this blog, because I am curious as to what you think of mammograms?  Some people say they cause cancer.  Some people believe in thermography instead.  Some people think none of it works.

What do you think?

Already looking forward to tomorrow because I can walk to work!

Greek Chili

This morning we woke up to the sound of rain outside.  Even though it was raining Pepsi and I headed out on our morning walk.
 
Got ready for work.
Had my shake (Green monster-YUM!)


 
And drove to work.  I don’t like driving to work.  I would rather walk but between the rain and an early morning meeting I had no choice.
 
Had a great lunch. 

 
 
Those are leftovers in the Tupperware.
 
Came home and had no energy to workout.  Sometimes a day off is good.
 
And decided to make this bean soup.  Which turned out to be more of a Greek Chili.
 
Super comforting on a cold day.

sautéed 1 onion, 2 garlic cloves in olive oil (probably 2 tbsp)


 
Added in 1 14 oz can diced low salt tomatoes, 1 tbsp tomato paste, 2 bay leaves, 2 tbsp dried dill, 1 tbsp oregano, 1 tsp salt, 1/2 pepper, 1/2 tsp paprika, and 1 tbsp brown sugar.

Simmered for about 20 minutes.  Then added two 14 oz cans beans (rinsed). I used chickpeas and kidney beans.

Simmered for about 10 more minutes.  I added a bit of vegetable broth because it got too thick.

Added some feta cheese and served it on a bed of spinach and brown rice. 

My husband and I both thought it was delicious!
