Omnivores turned vegan?

Bill’s parents would consider themselves healthy Omnivores usually eating fresh fish and veggies with some cheese and red meat occasionally.

They really are the picture of health.  Would you belive his dad is 7o something and his mom his 60 something.  It’s her birthday today too!

Their friends, the Canadians Linda and Tom are vegans.

Linda turned vegan about 15 years ago because she had debilitating back pain.  She read The China Study which led her to try the diet to fix her back problems.  Consequently it worked and she has been a believer in a vegan diet since then.  Don’t they look great as well?

As you know, Bill and I have been dabbling in the Vegan diet more and more lately.  What pushes us to continue is how great we feel and how strong we both feel working out.

Last night we shared our vegan food with Bill’s parents and Linda and Tom.

We started with some appetizers.

And some vino.

And we served my new favorite dinner party meal.

Angela’s Vegan Lasagna and Bill’s famous Kale Salad.

Bill’s Dad could not belive the lasagna did not have cheese.  This recipe really is  great for non vegans because it tastes spot on to the “real” thing.  Also, Bill’s Kale Salad is really becoming quite a hit too.  I am going to post the recipe when we get back from vacation.

It was a fun night and fun to share vegan food with some non vegans.

Now we need to get our appetite going for Thanksgiving!  Can’t believe it is tomorrow :)

Luck of the Irish

Last night, Bill, Stosh (a friend of ours visiting town for the weekend), Jack, Carol, and myself headed out to an Irish Pub downtown:

The menu was fun with all kinds of Irish goodies like Shepherds Pie and Corn Beef and Cabbage, and Bangers and Mash.

So much to choose from!

And yes there was beer:

Speaking of beer, we started with some beer battered onion rings-YUM

Lots of fun was had.

I ended up ordering the most delicious burger and a Pinot Noir.  I know so not Irish but it was amazing.  Plus I tasted Stosh’s Shepherds Pie and Carol’s Corned Beef and Cabbage.  It was all delicious!  Definitely going back.

Today I am drinking lots of water and eating very lightly.

It is all a balance.

Back to the work week tomorrow :(  Must say a three day weekend is so much nicer than a 2 day weekend. I really enjoyed having Friday off :)

We have been “eating ” out of the butler’s pantry:

We have been making do with store-bought salads and soups and baked potatoes and instant oats but it sure will be nice to cook some pasta ;)

One step at a time…………

I am excited because Khrystle is on her way over and we are gonna have a glass have wine to celebrate.
