Thank god it is Thursday :)

Does anyone out there suffer from Migraines?

I used to have terrible migraines as a child.

But I seem to have out grown them up until…………………………………..LAST NIGHT :(

I woke up in the middle of the night with the WORST headache.  I stumbled to the medicine cabinet and took 4 advil-this usually does the trick.

No luck.  I was in PAIN and nauseous and sweating.

I went and laid down in the spare bedroom because poor Bill did not need to hear me moaning.

It was awful.

Still feel out of it this morning but must go to work-the little kiddies are waiting for their teacher :)

Before all this happened I made another lovely, “clean out the fridge” dinner.

Baked up some yellow squash, zucchini, sweet potatoes, an apple, and garlic cloves:

Cooked up some quinoa with some roasted corn mixed in:

All together now topped with some nuts:

It was yummy :)

He came home with this beauty yesterday.  The bike is so light!

We are almost to the weekend :)

So Spoiled

This morning I awoke to the sound of rain out our window and on the roof.

UGH!

Then it occurred to me how spoiled I have become.

I used to have to deal with this:

Granted it can be beautiful at times.

Unfortunately when you have to work in these conditions instead of ski-it can become quite tedious.

Now this is what I get to see:

I feel lucky. 

Now if only this rain would stop!

On to some good eats……

Last night I wanted vegetables-and lots of them!

Chop them up:

Toss them in a pan with some olive oil, sun-dried tomatoes, flax seeds, and salt and pepper and you got a veggie extravaganza!

Yum!

Served with two blobs of spicy humus:

I think pajamas and wine are on the agenda next. 

And then of course, dinner with my hubby-the best part of the day!

Hippie Hot Dish and Bar Perfection

I have finally perfected my homemade-save-me-some-money energy bar recipe.  I have dedicated too many posts to trying out energy bar recipes but think I have finally mastered a good one.

It is adapted from this post.  When I made them that time, they were good but were not sticking together.  To keep them vegan and healthy I added 1/2 cup applesauce.  NOW they stay together and are wonderful!  I will post the recipe on my recipe page but I must give kudos to this lady who first posted her variation and inspired me to bake them. 

Last night I made what I like to call a “Hippie Hot Dish” for dinner.  I wish I could say I came up with that term but it was my dear friend, Debbie who coined it first.  LOVE IT!

Started with this guy:

Added some more veggies:

Seasoned with some of these (new products at TJ’s!):

Broiled the veggies for about 20 minutes on high.  Cooked up some brown rice and grabbed some beans:

Layered the mess on some spinach:

Added some avocado:

Alkaline vs. Acidic

I have been hearing a lot of information lately about the benefits of eating an alkaline diet versus acidic diet. 

Apparently cancer cells thrive in acidic environments as other diseases do too.  By eating certain foods, you can increase the alkalinity in your body and decrease the acidity.

I was first introduced to this idea while reading the book, Thrive.  In fact, I switched a few things up in my diet because of his research.  I switched from whey protein to hemp protein.  I introduced coconut oil into my diet along with my staple of olive oil.  And I have played around with making my own energy bars and soon will try to make my own “gels.”

I have also introduced “green”  food supplements such as amazing grass into my diet on a daily basis.

Most vegetables produce an alkaline environment while most processed foods  and meats create an acidic environment in our bodies.

I would like to further research whether our vitamins are working against the alkalinity in our diets as well.
