Longest Week Ever

I have never been so happy to wake up and realize it is Friday!

This week has been LONG.

What is even better is that it is the last Friday of the school year :)

Next Friday I will be basking in all my summer glory-YAY

Last night we had a funny throw it together kind of meal.  We are really out of groceries and with not much left in the pantry, we created this:

I am not a big frozen food fan, but this was good!  Tasted quite homemade.

Yesterday when I worked out with Khrystle and Sarah in the park-Pepsi ran around and got in a workout too.

Thursday Check up

This week, I have been trying to keep up with some of my goals.

They are:

  • eat more fruits and veggies-easy for me
  • run twice-has not happened
  • workout with Khrystle-will do that today
  • and ride this weekend-will do!

So in my effort to have more veggies, last night we had a fun dinner based around this sauce:

and these roasted veggies:

I wanted to have some of this too:

Love this stuff!

I layered bulgur, veggies, tofu, sauce (mmmmm) and avocado for the perfect veggie bowl:

We ate while watching a new to us show called, “One Big Happy Family.”

Have you seen it? We kind of liked it.

Pasta Salad and a New Store

Today was a very relaxing Sunday.

Took Pepsi to on a great little hike.  My legs are so sore from my race yesterday. Ouch ;)   That I only managed to walk with her for about 30 minutes.  She still loved it though :)

Then instead of doing my normal TJ run I ventured to a new store.

I have to be honest I LOVE Trader Joe’s but the store in my town is ALWAYS so busy.  It makes me crazy.

Sometimes I just can’t fathom the idea of grocery shopping there while fighting the crowds.

So I tried this place today:

Have you tried Fresh and Easy yet?

You know it was not so bad. 

  • It was NOT crowded.
  • It had some fun “new to me” products.

However, there was not a lot of organic produce and you have to self checkout.

Other than that, I think I would go again.

 

Tonight featured some of those new items.

First we had to try a bit of this gem.  How do you pass up wine that has a bicycle on it? 

Two loves merged into one!

It is real good.  If you like a light Pinot this is for you :)

Then I made another great salad.  

I actually could not decide if I wanted pasta or salad so I decided to go with Pasta Salad!

Started with organic spring mix:

Added lots of love:

Including these fun new nuts:

And a fun new sauce/dressing:

Altogether with the pasta (yes there is salad under there!):

It was delicious!

My Kind of Taco Salad

It was fun to “hear” what others think about this matter. I appreciated all of your honest opinions.

On to dinner time……..

These three items were my inspiration behind my version of Taco Salad:

First I made a fabulous salad with lots of fixins:

There is lots of love in that baby…….

Then I warmed up the beans with the corn in a saucepan.

Microwaved the brown rice.

Chopped up the avocado:

Nothing says, “Taco Salad” more than cheese in my opinion:

I prefer the goat over the yellow kind.

All together now with some hot sauce on top:

Super good!
