Operation Strong Arms

Last night we tried some fun new items in our salad thanks to my Fresh and Easy run:

  • Loved the lemon hummus-of course I have not met a hummus I did not like!
  • The Butta :) Beans lived up to their name and were buttery and good.
  • And the tofu burgers tasted homemade not prepackaged like the frozen ones I normally buy.  I know I have to make my own soon ;)

My salad beast:

Well today is an exciting day for me! 

After work Khrystle and I are meeting to start my “training” regime.

Khrystle is a certified personal trainer and life style coach and a good friend ;) .

I will be using her personal training skills to get my upper body in shape and to speed up my running.

  • Tuesdays will be arms.
  • Thursdays will be speed work.

I am very excited to see what she has planned for me this afternoon.

I will definitely be back to let you know how Operation Strong Arms went!

Are You Deficient?

Yesterday I left work early to head to a doctor’s appointment.

This was my follow-up from my last appointment where I gave blood for a nutritional panel.

My doctor is a Medical Doctor but she tends to lean towards a Holistic approach to medicine-believing that many “aliments” can be caused and therefore treated by deficiencies in your blood specifically vitamin and nutrient deficiencies.

I found out that I am deficient in:

  • magnesium
  • selenium
  • zinc
  • vitamin D

Here is my course of treatment for now:

She also recommended some other things like:

  • eat a bit of protein as soon as you wake up to “break the fast” and then have coffee
  • DRINK MORE WATER-so hard when you are a teacher and can only use the bathroom at certain times!
  • cut back on the refined carbs-duh-I know…..easier said than done

I am a work in progress……  : )

Then I came home to this face:

And had a gorgeous salad beast with my husband.

The star of the show:

Not as good as the last egg white salad.  Probably would not buy this one again.

Good glass of vino:

Watched an episode of Dexter.

Walked Pepsi.

And hit the hay.

My Kind of Taco Salad

It was fun to “hear” what others think about this matter. I appreciated all of your honest opinions.

On to dinner time……..

These three items were my inspiration behind my version of Taco Salad:

First I made a fabulous salad with lots of fixins:

There is lots of love in that baby…….

Then I warmed up the beans with the corn in a saucepan.

Microwaved the brown rice.

Chopped up the avocado:

Nothing says, “Taco Salad” more than cheese in my opinion:

I prefer the goat over the yellow kind.

All together now with some hot sauce on top:

Super good!

Any fun weekend plans yet?

Antioxidants

So I have battled the case of the “icks.”  Can’t seem to beat the achy, tired, throat thing.

With that in mind I started my day with a carrot juice inspired smoothie and my favorite Tazo tea:

I also decided to dig into my supplement cabinet for an extra boost:

Has anyone tried these babies?  They give you quite a boost which I needed today!

Had a wonderful salad beast for lunch (inspired by the Ftnessista!):

It was delicious and followed by my home made vegan energy bar:

So in my effort to

  1. welcome in the long weekend
  2. get rid of this cold

I decided to have one of these after work:

You know red wine is supposed to have antioxidants!

I just had to have a glass……or two.

So by the time I got home I was not in the mood to cook for one.

Instead I made a green monster:

And am looking forward to my new reading material:

Tomorrow Pepsi and I are headed to Orange County to meet up with my parents for the day.

We have four glorious days off!
