Happy birthday Pepsi

Today is Pepsi’s 14th birthday.  

She is such a good dog.  Bill got her when she was 16 months old from the Guide Dogs of the Desert.  She did not graduate to become a guide dog because she was a bit hyper and they thought she could become blind herself.  And they were right!  She was always hyper when she was younger and she has now become blind. However she gets by pretty good.  What we love about her is that she still is a little girl at heart.  Even though she can’t walk very far now or see or hear very well, she still has her wonderful, young spirit.

We love her :)

Today while I ran my 10 miles along the coast, I thought a lot about her.  She  used to run with Bill and I all the time.  In fact, there was a time when Bill took her on LONG mountain bike rides.  She was always up for a run.  Now I have to run alone but I have all of my great memories to keep me company.  Sometimes I think of her and my dear Rottie, we lost him 7 years ago.  He used to run with me too.  It is bittersweet.

So today Pepsi got extra hugs and kisses and extra love.  She also spent sometime on our bed this morning.

We won an award!

Bill and I really enjoy the All Season’s Cyclist Blog and have been awarded from David the Kreativ Blogger Award.

We feel honored :)

When you receive this award you must share 7 things about you.  So I thought it may be fun to share 7 things about Bill and I.

So here they are:

1. We love to go to bed early.  Yup we are one of those couples who get excited when they can be in bed by 8pm.  Which of course leads us to liking to get up early in the morning.

2. We love to work out-duh!.  Bill and I always do a workout in the morning.  Most of the time he rides and I run but sometimes we run races together or just walk Pepsi.

3. We love wine though I think I love it more ;)

4.  We met because we both loved cycling.

5.  We have separate last names.  I never changed mine when we got married but I am thinking of changing it now.  Why not?  I like his last name :)

6.  Our bucket list includes a trip to Italy, a new home in Colorado with some land, and a baby rottweiler.

7.  Some people mistake us for brother and sister.  Weird?  Yes a bit but they do say you are attracted to people who look like you.

Vegan overnight oats and some running

Funny that last week when I was off for Spring Break, I did not get much running in.

I guess I just needed a break?

Instead I ended up trying Crossfit and getting back into cycling.  It was a nice change of pace.

But when I am working, I CRAVE a run first thing in the morning.

This morning I met up with my friend Sara and we ran a little over 6 miles.

It was a beautiful morning!

Once I got to work, I got busy eating my vegan overnight oats.  I instagramed it because I am addicted to instagram and all the clean eating and inspirational folks on it.  And quite a few folks asked how I make my wonderful creation.

Well this is how it is done:

Use these ingredients.

That would be muesli, chocolate protein powder, chia seeds, almond milk and cinnamon.

And lately I been adding a bit of carob powder-makes it even more chocolatey.

I do not measure but I would say I am using approximately:

3/4 cup muesli, 1 scoop protein powder, 1 tsp. chia seeds, 1/2 tsp cinnamon, 1/2 cup almond milk and 1 tbsp almond butter.

Put all the dry ingredients in a Tupperware or bowl the night before with almond milk and almond butter.

And then mix it all up in the morning.

So good.

That’s how I do it :)

I prefer my oats a bit on the chunky side so I do not use that much almond milk.  Experiment with different measurements and find what works for you.

13.1 miles is special to me

Last night, Bill and I loaded up the car and made the trek back home armed with the good stuff.

We finally arrived home safe and sound.

Vacations are wonderful but there is something to be said about home :)

Luckily I was greeted by a gift I had purchased before we left.

13.1 miles is special to me.

6 months ago I did not think I would be able to run that far without pain.  And now I feel like I can get through that distance anytime.  Sometimes the distance is easy and sometimes it is hard.  But it is never unattainable.  Plus 13.1 miles is just far enough without being a killer like a full marathon.

With that said, today I decided to ride my bike!
