Runmeter Fun

Today has been a very relaxing day.

I love days when I am not rushing around.  I feel like I do enough rushing during the work week.  Weekends are best when they are slow and easy.

My husband was able to sneak in a long bike ride between the rain storms and I was able to enjoy the break between storms too.

My day started with these oats cooking on the stove:

I mixed in bananas, raisins, cinnamon, flax seed and topped with some more bananas and organic jelly.  We are out of almond butter!  YIKES!

Then Pepsi and I headed to the dog park:

She loves the park. 

I think  know she prefers sniffing around by herself-but she tolerated these two:

On our way home we spotted these pretty poppies:

After I dropped Pepsi off, I took off on my run

I think I finally have mastered using the runmeter app on my iPhone.

It is an application that basically works like a Garmin GPS.  It took some getting used to on previous runs.  It has its quirks and you must learn how to use it while listening to your ipod and answering calls.  I have finally figured it out though!  And I LOVE it!  This is one of the reasons why I wanted the iPhone so badly.  I wanted to be able to bring ONE thing on a run instead of a separate ipod, separate Garmin, and separate phone.  Now I have it all in one place!

Got home and had a shake-out of spinach so it is NOT green:

Went to Target. Then got a pedicure-finally. 

 And then came home and had lunch with my husband:

Now we are watching True Blood.  Is anyone else addicted to this show?

Soon we will be heading out to meet up with friends.  Looking forward to some good wine, good conversation, and good food.

Small Joys

There is something about sitting in bed, drinking coffee, reading blogs, and knowing I have no where I HAVE to be……..

To me that is something special!

I love lazy mornings.  Do you or do you like to get up and go?

I am going to get up soon though

I have plans to make some oatmeal. 

Walk Pepsi to the park.

Go for a run with my new Runmeter application on my IPhone.

Go to Target. 

Get a pedicure. 

Hang out with hubby. 

Have wine and dinner with some lovely friends.

The End is Near

Last night we got a wonderful surprise from my in-laws!  A gorgeous set of linens for our new bed.

Here is what our bed looked like:

We desperately needed something new and colorful.

And now we have something:

It was so wonderful to sleep in! Super soft and luxurious.

We are happy…..

This morning after the wonderful night of rest in our bed, I started with this:

I love drinking coffee with soy creamer in bed while catching up on blogs.

Then Pepsi and I ventured out for our second run this week.  I am so proud of us.  I owe some of my motivation to my blog friends for sure!  All of you and specifically Berni and Mariposa Girl!  Berni is running a half this weekend-I hope to do one in the near future.  It has been too long since I ran a half.

Then I donned my runners (again) and walked to work. Love it! It is such a stress relief and a good time to catch up with friends.

Lunch was leftovers and an apple and orange:

Between 5th and 6th period I ate one of my homemade vegan energy bars.

I hope to make some sautéed vegetables of some sort for dinner.  Not exactly sure what is on the menu just yet.

I am off to the bike shop.  “Tabitha” (my bike) needs some TLC.

The end is near-tomorrow is Friday!

Super happy for the weekend. 

I hope to get a pedicure-it has been too long. 

We are also meeting friends at our favorite wine bar Saturday night.  Not sure what else is going on but so far it looks good.

Hippie Hot Dish and Bar Perfection

I have finally perfected my homemade-save-me-some-money energy bar recipe.  I have dedicated too many posts to trying out energy bar recipes but think I have finally mastered a good one.

It is adapted from this post.  When I made them that time, they were good but were not sticking together.  To keep them vegan and healthy I added 1/2 cup applesauce.  NOW they stay together and are wonderful!  I will post the recipe on my recipe page but I must give kudos to this lady who first posted her variation and inspired me to bake them. 

Last night I made what I like to call a “Hippie Hot Dish” for dinner.  I wish I could say I came up with that term but it was my dear friend, Debbie who coined it first.  LOVE IT!

Started with this guy:

Added some more veggies:

Seasoned with some of these (new products at TJ’s!):

Broiled the veggies for about 20 minutes on high.  Cooked up some brown rice and grabbed some beans:

Layered the mess on some spinach:

Added some avocado:
