Warm Couscous Salad

Tonight I came home and knew I wanted to make something with this:

I decided it needed to be a warm dinner because it was a bit cold and dreary outside.

I first made the couscous with organic veggie broth and set it aside:

Then I sautéed 2 tbsp olive oil, 2 chopped cloves of garlic, and 1 whole onion.

Once they softened up a bit, I added a chopped yellow pepper, and 1 cup of shredded carrots:

Then I added 1 cup of chopped mushrooms, 1/2 cup sliced cherry tomatoes and seasoned with salt/pepper, cinnamon, and garlic powder:

Right before serving, I added 1/4 sun-dried tomatoes in olive oil.

And steamed broccoli.  I steam the broccoli  right in the bag!

Lastly, I layered the couscous over a bag of organic spinach.  Mixed in the sautéed vegetables and topped it all with a bit of feta cheese and some pistachios:

My bowl:

I hated it obviously!

Now Bill and I are sitting in front of the fire with some tea:

And Pepsi is passed out snoring on her bed!

Cute baby-girl………

Hope you stay warm and dry tonight.

Cheat Day

Happy Saturday!

My Saturday is quite happy because my husband woke me up to chocolate pancakes (can my day get any better than this?)!

He even took pictures as he was cooking.

But first this is Pepsi’s breakfast:

She gets Bovine Colostrum too.

She loves to eat!

And here is our lovely breakfast.

My husband started with Trader Joe’s spiced pumpkin pancake mix:

Then he melted semi sweet chocolate chips and added the melty mix to the pancake mix:

The finished product.

They do not look to pretty but boy did they taste good with almond butter and maple syrup.

We split this pile of love:

Okay sugar coma on the way……..

We are off to ride our bikes.

I can tell you I am definitely fueled up for the ride……..

Hopefully my new “kit” still fits after my breakfast!

Look how awesome it is:

Have a great day!
