Thursday Highlights

Happy Friday Bloggies!

This morning I thought it would be fun to share some of my highlights from yesterday.

First highlight was a glorious run in the morning. I have had a few things on my mind lately and sometimes the only thing that will clear it is a good run.  I felt so much better afterwards.

Next highlight was a really yummy and very green Green Monster to start the day.  This one had almond milk, 1 scoop Vega meal, flax seed, banana, frozen berries, and lots of spinach-YUM!

I just love starting the day with one of those!

Next highlight of the day was this silly face.  I had just given her a treat.  Unfortunately I missed the picture of her eating it because she is sooooo fast when it comes to grabbing those snacks from me.  Not sure any camera could keep up!

I think she wants more.  She looks starving.

After work I headed over to the next highlight of the day:

Yes I got my hair done.   I have to admit it-I have gray hair-it sucks-I am getting old.  I have to go to my favorite girl every six weeks.  She keeps me looking beautiful!  Thanks Rachel : )

And the last highlight of the day was his and her pastas.

Tonight was “make your own pasta” night.  We boiled up a big pot of pasta.  We mixed white and wheat.  And laid out a bunch of toppings.

Yes that is hummus on top.  Am I the only one who likes hummus on everything?

I hope to do a 5K on Sunday but it is supposed to be pouring rain…..We shall see if I can be as tough as Berni!

Do You Kabocha?

Last night I decided to cook up this lovely Kabocha squash my sis got me:

I baked it in the oven at 350 for about an hour.  The house smelled heavenly.

When it was finished and resting.  I chopped up eggplant, zucchini, peppers, mushrooms and added cherry tomatoes, and sunflower seeds to a roasting dish.

Sprayed them with olive oil and seasoned with salt and pepper.

This is my new favorite kitchen device:

I broiled all of it for about 20 minutes.

Mixed the broiled veggies with cut up kabocha squash and brown rice, flax seed, avocado and eggplant hummus:

It was delicious along side this glass of vino:

Tonight I think we will have some pasta.

I am off to pack for the weekend!

Bill and I are headed out-of-town to visit his parents.  His Dad is doing much better but we thought it would be fun to pay them a visit.

Table for One

This week my hubby has been out-of-town helping his parents. 

Unfortunately his father has to have surgery due to several herniated discs in his neck. 

Pepsi and I have been lonely girls. 

Poor Pepsi misses her father:

So I have been flying solo in the kitchen. 

Last night I was not too sure what to have for dinner.  Cooking for one is quite foreign to me.  It would seem easy to do but I have found it to be an adjustment.  Plus it is always fun to talk about the food you are eating with your hubby.  Pepsi doesn’t want to talk…….She just wants to eat!

Since I was feeling under the weather,  (Unfortunately I think I am finally sick.  Nothing too debilitating but enough to make me very tired, achy, and my throat irritated) I wanted some sort of soup-like comfort food.

I decided to try this can out for size:

I knew I needed to “vegefy” the chili so I put the chili on a bed pf spinach and topped with carrots:

And sprouts and nuts:

And steamed broccoli, flax seed, and very spicy hummus:

If you  like spicy things, I recommend trying this hummus:

Gosh it was a good bowl of chili.

Right now I am sitting in front of the fire drinking some hot lemon water:

I find it soothes my throat. 

What are some of your sickness remedies?

Well I am of to do a short walk with Pepsi and then get to bed early.  I really do not want to be sick for the long weekend ahead.

Favorite Things in the Kitchen

Tonight I thought it would be fun to mention some of my favorite things in my kitchen. 

Maybe once you see my list you might be able to share with me some of your favorites too.

Here we go.

First up my favorite cookbook:

So love Giada!  Pretty much everything she makes is easy and no fail.  And everything I have tried either from her show or from this cookbook has been great.

Hummus-really any kind will do:

At our house, we pretty much put this on EVERYTHING!  So far the only thing I have not paired it with is chocolate.

Awwww Almond Milk:

So delicious in shakes, cereal, baking and even coffee (though not as thick as soy creamer).

Awwwwww Almond butter (swoon):

If I could jump in the jar I would!

Of course this super star cannot be missed:

And last but not least………….

My all time favorite tea:

I was reading a blog this morning that mentioned now they have Tazo in loose-leaf form? 

Darn it I can’t remember whose blog it was!
