Obsessed

This week I have been obsessed with veggies.

It is not like I have not done anything else but eat vegetables.  I have been running, biking, walking, and lunching with friends but for some reason the only pictures I have been taking have been of my veggie filled meals.

Case in point:

Maybe I should not be able to go to the farmers market?  I do get a bit obsessed with my veggies :)

Do not worry though-It is Friday!!!!!

And lots of fun things are planned today:

  • Run
  • Walk Charlie
  • Have lunch with Khrystle and Sara at a fun vegan place downtown
  • Errands
  • Dinner with friends

And tomorrow morning is BOOT CAMP-can’t wait!!!!

Bill’s Bulgar

Last night while I was “playing” on the computer, Bill was making dinner.

He prepped the salmon before putting in the oven:

And made the best bulgur dish I have had to date.  Unfortunately, he is keeping it a secret even from me.  But I am guessing there were many spices involved and some olive oil.

Here is my dinner plate with some lemon hummus on top of my salmon:

It was a delicious meal!  I am really loving my new grains-bulgur and barley lately.  I also feel good that I am eating them instead of pasta all the time.

What healthier thing have you swapped out lately?

Also, what other grains should I try?

Remember last Friday when I was too tired to meet up with Khrystle for a Tabata Ropes workout?  Well today we are meeting up to do it :)   I am very excited because it sounds so different and I hear it is quite difficult.

I will let you know how it goes!

Operation Strong Arms

Last night we tried some fun new items in our salad thanks to my Fresh and Easy run:

  • Loved the lemon hummus-of course I have not met a hummus I did not like!
  • The Butta :) Beans lived up to their name and were buttery and good.
  • And the tofu burgers tasted homemade not prepackaged like the frozen ones I normally buy.  I know I have to make my own soon ;)

Well today is an exciting day for me! 

After work Khrystle and I are meeting to start my “training” regime.

Khrystle is a certified personal trainer and life style coach and a good friend ;) .

I will be using her personal training skills to get my upper body in shape and to speed up my running.

  • Tuesdays will be arms.
  • Thursdays will be speed work.

I am very excited to see what she has planned for me this afternoon.

I will definitely be back to let you know how Operation Strong Arms went!

Hodge Podge

Bill and I had a busy weekend with all of the birthday stuff and his mountain bike race so we did not make time to do our weekly grocery shopping.

Instead we only bought a few fun items and decided to wing it for the week.

Do you ever decide to have a “cleaning out the pantry/refrigerator” week?

I think it is kind of fun because you end of making some interesting things!

Last night was no exception-I made what I like to call, a Hodge Podge Bowl.

The star of the show was this:

This was my first time buying these and I don’t think I would buy them again.

For the price they should have tasted better :(

I whipped up some Israeli Couscous for the base:

I cooked it in veggie broth, hemp milk, and added some raisins at the end

Baked up some vegetables:

There were yellow squash, sugar snap peas, garlic cloves, brussel sprouts, and sweet potatoes in the mix

Topped the bowl with some hummus and roasted almonds:

The Hodge Podge was a success!
