We Improvised

As I mentioned yesterday, we are pet sitting two silly little pups for the next week or so. If you have been reading my blog for any length of time, you must know how much Bill and I love dogs.  In fact, we have made a conscious choice to have dogs instead of babies and we like it :)

These little guys are a pleasure to hang out with:

and Pepsi doesn’t seem to mind either.

The owners have a great house and a big BBQ and we originally were going to grill some slider size burgers and veggies but it was a fail…….the BBQ does not seem to be working.

So Bill and I improvised.  We just put all of our grillables on a foiled lined baking sheet and broiled until perfection.

And it didn’t turn out too shabby.

Dinner Success!

So glad it is Friday.  Bill and I are lounging on the couch and resting up.  No wild plans for us this weekend but I think a hike is in store for me tomorrow.

Little Bits

This week has been a strange one.  I have felt so tired.  Funny how some weeks I have so much energy and jump out of bed at 5am revving to do the 30 day Shred and others I can just barely get up and walk Pepsi.

I had one of those weeks.  So I honored my feelings and I just went easy on myself.  I ended up just doing two days of yoga.  Pepsi seemed to enjoy it:

What is it with dogs and yoga mats?

Do you ever have weeks where you feel tired and others where you feel great?

Today was exciting though for two little reasons!

First I was mentioned on Melissa’s blog. She works for NuVal the same company as Tina from Carrots and Cake. A few days ago I asked Melissa to rate almond butters on the NuVal scoring system.  Check it out-very informative!

And lastly, we got some blinds in our house!

Puppy Bear

Last night was a lot of fun. 

Really how can you go wrong with good wine, good food, and great people?

Today I used my runmeter again and ran another 5 mile loop.

Then I decided to take Pepsi to a local park that has an extensive trail system.

It is also very dog friendly!

I am not sure why I don’t take her here more.  It is only about a 5 minute drive from our house and she loves it!

Today I kept an extra eye on her because these signs were posted everywhere:

After our outdoor adventures, we ventured to Trader Joe’s.  Not a good idea on Super Bowl Sunday when everyone is picking up snacks for their parties.  Actually, any Sunday at TJ’s is a mess.  I wish we had some other stores in this town!  We don’t have Whole Foods, Sprouts, or anything!  Grrrrrrr…….

Anyway, I picked up a new item to try:

So far I have not tried it but I did use it in my vegan energy bars instead of normal almond butter.

I doubled the recipe and made half of the bars in a cupcake tin.  I have finally tried the reusable cupcake liners my sis bought me a long while back-thanks sis!:

They are cooking now as I type and boy does the house smell divine!

Warm Couscous Salad

Tonight I came home and knew I wanted to make something with this:

I decided it needed to be a warm dinner because it was a bit cold and dreary outside.

I first made the couscous with organic veggie broth and set it aside:

Then I sautéed 2 tbsp olive oil, 2 chopped cloves of garlic, and 1 whole onion.

Once they softened up a bit, I added a chopped yellow pepper, and 1 cup of shredded carrots:

Then I added 1 cup of chopped mushrooms, 1/2 cup sliced cherry tomatoes and seasoned with salt/pepper, cinnamon, and garlic powder:

Right before serving, I added 1/4 sun-dried tomatoes in olive oil.

And steamed broccoli.  I steam the broccoli  right in the bag!

Lastly, I layered the couscous over a bag of organic spinach.  Mixed in the sautéed vegetables and topped it all with a bit of feta cheese and some pistachios:

I hated it obviously!

Now Bill and I are sitting in front of the fire with some tea:

And Pepsi is passed out snoring on her bed!
