We Were Not Convinced

Bill and I have been together now almost 7 years.

When we first met, we had both just gotten out of some bad relationships.

I from a bad marriage and even worse divorce.

He from a bad relationship almost just has toxic as my marriage.

We both said we would never get married.

We have been in a very happy and healthy relationship since then.

We were not convinced marriage would make things better for us and we might have been scared that marriage may make things worse. 

Why change something that is working so well?

Well last December, we ran off like silly birds to the local court house and got married.

I know…..kinda crazy!

And fun :)

And romantic.

So this summer, Bill’s parents are throwing us a reception at their home in Reno, Nevada.

Yesterday we got our fun invites:

We can’t wait!

It should be a lot of fun :)

So to celebrate our fun I thought I would throw in a giveaway!

This week is flying by……..

Tonight is Nutrition Club :)

Do You Kabocha?

Last night I decided to cook up this lovely Kabocha squash my sis got me:

I baked it in the oven at 350 for about an hour.  The house smelled heavenly.

When it was finished and resting.  I chopped up eggplant, zucchini, peppers, mushrooms and added cherry tomatoes, and sunflower seeds to a roasting dish.

Sprayed them with olive oil and seasoned with salt and pepper.

This is my new favorite kitchen device:

I broiled all of it for about 20 minutes.

Mixed the broiled veggies with cut up kabocha squash and brown rice, flax seed, avocado and eggplant hummus:

It was delicious along side this glass of vino:

Tonight I think we will have some pasta.

I am off to pack for the weekend!

Bill and I are headed out-of-town to visit his parents.  His Dad is doing much better but we thought it would be fun to pay them a visit.

My Kind of Taco Salad

On to dinner time……..

These three items were my inspiration behind my version of Taco Salad:

First I made a fabulous salad with lots of fixins:

There is lots of love in that baby…….

Then I warmed up the beans with the corn in a saucepan.

Microwaved the brown rice.

Chopped up the avocado:

Nothing says, “Taco Salad” more than cheese in my opinion:

I prefer the goat over the yellow kind.

All together now with some hot sauce on top:

Super good!

Any fun weekend plans yet?

Green Recovery and New Product

Last night was all about recovery for my husband. So I thought I would make a delicious pasta dish (meaning use up the remnants of our refrigerator and see what happens!).

I sautéed garlic in olive oil:

Chopped up various veggies:

Tossed them in with the garlic/olive oil mixture:

Added some chopped kalamata olives:

and these-I know kind of weird but they added much-needed flavor to the recipe (remember I was cleaning out the fridge):

All together now:

Served it over pasta and added some more green-avocado for a super green feast!

I was worried that it would taste weird but it was very good and satisfying.  I am convinced you can not add anything to pasta that would not taste good.

Anyone else feel the love for pasta like I do?

We finished off the night a bit naughty…….

Hee! Hee! By eating cookies dipped in almond milk!

This morning I tried a new product in my shake:

I ran out of Bovine Colostrum.  When I was at the doctor the other day, the nutritionist on staff recommended this to me.  I like how it made my shake creamy and slightly thicker.  I am also happy to add a bit of protein to my morning meal.  This is whey protein but has no added flavors or sugars.  It goes really well with the Amazing Grass.
