All is right

Ahhhhh to be back home.

As much as I love going places, nothing is better than being home.

This morning I greeted our neighborhood with a walk with Pepsi and we were treated to a fabulous ocean view.

Please remind me of this when it is super foggy in June and I have to wear a North face down jacket :)

And then we came home and I enjoyed a big bowl of steel-cut oats topped with almond butter and jam.

And my beloved Nespresso espresso.

And now I am ready to head out with my bike gang for a ride up the coast.

Can’t wait!

Improvised Oats

So we finally perfected cooking our morning oats!

Since we have been sans kitchen we have tried many variations of oats.

  • Overnight oats-not bad but yogurt is just okay in my book and it upsets Bill’s stomach
  • Vegan overnight oats-does not warm me up enough for a winter breakfast
  • Quick cooking oats-mushy
  • Microwaved steel-cut oats-not quite right
  • Old fashioned oats-will do but we so prefer some crunch

And yet they all had some problems until we found this gem at TJ’s:

Oh thank goodness Bill found this the other day.  The convenience of a quick cooking oat but without the mush factor.

What we do is we warm up the water with this guy:

While that is heating up, I add the oats, cinnamon, pinch of sea salt, and raisins to the Tupperware (we looked long and hard for approximately the same size as Starbucks Perfect Oats container):

And then we add the water and enjoy with mixins.  My favs lately are these babies:

Sometimes I do have to pop the whole mix in the microwave for about a minute and then it is perfection.

I wonder once the kitchen is done if I will remember how to really cook ;)

Meal by Meal

Happy Last Tuesday of the school year for me :)

Hopefully you had a lovely Monday and now a lovely Tuesday!

I thought it would be fun to share what I ate meal by meal.  I don’t usually do this because

  1. I am not a food blogger specifically
  2. It is a pain to record all of you meals
  3. I don’t usually have the time

But I did do it yesterday so here goes…….

I woke up and had my usual coffee with soy creamer:

Once I got to work I drank my smoothie made with Tempt Hemp Milk, Living Harvest Hemp Protein, Pom Juice, Frozen Berries, Almond Butter, Half  a Banana, and a tbsp of Cocoa Powder:

A couple hours later I ate this yogurt:

I am not a big fan of yogurt but I do like the Greek-style versions as of late. I really wanted to try Voskos because I had seen it on other blogs and it looked so good. 

I emailed the company and they were so great!  They sent me 5 free product coupons so I could try their yogurt :)   They are also fun to follow on twitter and facebook and are very supportive of blogs.

I tried the fig flavor first-love the little chunks of figs in the yogurt:

I would DEFINITELY buy this yogurt without a coupon next time!  I found it to be the perfect consistency and not too sweet or tart-just right :)

A few hours later I had my lunch of watermelon and a leftover salmon sandwich (I mixed the salmon with some avocado):

Yes those are two different types of bread!  Ran out of one…….hee hee

So loving these bars……..creamy, crunchy, perfect!  Must buy more!

And for dinner a giant salad:

Wow I am tired, being a food blogger takes a lot of work!

Look who is staying with us until Friday or Saturday:

Well I am off to walk Pepsi and Lulu and get my bootie to work :)

And Then There Were Rings

Today has been a great day :)

After I had a fabulous shake made with almond butter, almond milk, cocoa powder, hemp protein, POM, oats, and frozen berries:

I went on a 32 mile ride with Melanie and Sarah:

 And then came home and ate.  I was STARVING!  Biking really makes me hungry-more so than running.  In fact during my ride I ate through one package of these:

But it was not enough.  Once I got home I quickly made lunch.

I smeared avocado and cooked sweet potato between two slices of wheat bread:

Best sandwich ever with an orange from a friends back yard.  It was heaven!

Then Bill and I ventured to Ormachea, a jewelry store in downtown Ventura.  They make all of their own designs and all jewelry is specially made just for you.

Remember how I told you we ran off like silly birds and got married at the court-house in December?  Well we never got rings.

Today we ordered them :)   They are being made just for us.

Here is what mine will look like:

I love the square shape and brushed look-so modern!

I can’t wait to get it!

Now I am kicking it and blogging and soon Bill and I are headed to a friend’s house for a BBQ.  Should be a lot of fun.
