Ingredients:
1 onion
2 cloves garlic finely chopped
2 tbsp olive oil
2 tbsp curry powder
3 cups cooked lentils ( I use the packaged lentils fromĀ Trader Joes)
1 cup tomatoes chopped
1 can light coconut milk (14 oz)
Directions:
Saute olive oil, garlic, and onions
add lentils, coconut milk, and curry powder
simmer for 10 min
add chopped tomatoes
simmer for another 10 to 20 min

I’m worried about the coconut milk. Is that a better choice than almond milk or rice milk?
