High Protein Vegan Overnight Oats

I am glad my blog facelift launched without a hitch.

Seriously Emily is the best!  She took our ideas and went with them and we are so happy with the results.  Hope you guys like it too.

The other day I posted about this recipe and said a formal recipe was to follow.  

Well here it is!

Bill and I just love overnight oats.  We prep them for the whole week on a Sunday night.  Just takes a second to do and then each morning we grab our deliciousness and head to work.  We have blogged about another version but we like this version because the extra protein adds a bit more staying power and the vanilla flavor powder adds a hint of vanilla creaminess which can’t be beat.

 

High protein vegan overnight oats

Total time: 8 hours 5 mins
Serves: 1
Higher protein easy overnight oats
Ingredients
  • ½ cup Bob’s Old Red Mill Muesli
  • 1 cup almond, hemp, or coconut milk
  • ½ Banana
  • 1 scoop vanilla vegan protein powder.
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon chia seeds
Instructions
  1. Put all ingredients in a bowl and mix.
  2. “Cook” overnight in the refrigerator.
  3. Next morning top cold oats with almond or cashew butter and fresh berries.

Even though the recipe calls for it to “cook” overnight in the refrigerator, here is our version without cooking it and topped with some granola.

Both ”cooked” and non cooked are equally delicious.

And If you have not used Bob’s Red Mill Muesli before, we highly recommend it!  Way better than plain oats.

Sometimes being unmotivated leads to greatness

Yesterday I woke up feeling a bit unmotivated and sore due to my Brick workout on Saturday.

Bill left bright and early on the group ride and I mulled around the house a bit.  I knew that if I got my running clothes on I would be golden.  I really wanted to get out and get a long run in.

So I turned to my trusty Lululemon clothes to get me feeling good.

Nothing like a cute outfit to help with motivation.

Works every time!

I ended up getting in 10 miles and I felt pretty good.  I tried not to focus on speed and just cruise.

Today after this wonderful cup of joe and this fabulous vegan oats Bill made us (recipe to come!) we are off to conquer some more miles.

Lately, I have been averaging about 35 miles of running a week with one decent bike ride thrown in.  I have been feeling good :)
