Ingredients:
1 onion
2 cloves garlic finely chopped
2 tbsp olive oil
2 tbsp curry powder
3 cups cooked lentils ( I use the packaged lentils from Trader Joes)
1 cup tomatoes chopped
1 can light coconut milk (14 oz)
Directions:
Saute olive oil, garlic, and onions
add lentils, coconut milk, and curry powder
simmer for 10 min
add chopped tomatoes
simmer for another 10 to 20 min
