Rest and recoup

This week, I have been focusing on resting, stretching, and eating healthfully.

Boy that Half Marathon wore me out!

It was worth it though :)   And I am still waiting on some race photos to share with you.  But I did get my official time  and it was 1:56:54.  Not too shabby for my first time though I am already dreaming of a new PR ;)

Last night I got creative with some ingredients (daiya cheese, veggie chili, and an onion).

And a jalapeno and garlic.

Chopped it all up and sautéed with some grape seed oil.

And then plated the whole mess with  gluten-free pasta.

It was delicious and comforting and filling. 

Just what I needed :)

    Glad that you are feeling good after the race. I can’t believe you ran 6 miles on Saturday and then ran the 13.1. You are hardcore! And congrats on the revised PR. If you take into account the bathroom break, who knows….
    Hope that you take a break and rest up!

  6. Awesome time on your half! They can take a lot out if you, I was sore for days after my first. Dinner looks wonderful, great use of Daiya.
