Massaged kale salad

Bill and I have been taking baby steps with this whole Kale thing.

At first we were scared to try it!  So prickly and bitter.

But we finally managed to try out store bought kale chips which were to die for.

And then we knew we had to try making our own.

Which we did and loved-though it made the house kinda stinky (anyone else?)

And now finally we tried massaged kale salad.

And we are sold.

We loosely followed this recipe.

Basically I just added to the chopped kale:

  • olive oil
  • apple cider vinegar
  • lemon juice
  • salt and pepper
  • raisins

And massaged away……..

We served it alongside a ton of broiled veggies (had to use up our CSA stash!) and this fabulous bread from our neighbor.

It was fabulous!  This is the one Kale thing I know I will continue to make.

    I live on greens: all varieties of kale, collards, swiss chard…any and all! I like mine in the raw and also gently steamed as a base for other veggies and even fruits. I can’t get enough. I am completely convinced that they rank up there with the Ninja Fruit, blueberries. I also use the leaves for veggie wraps.

    I’ve only tried making kale chips at home, but never massaged kale. The tough texture still gets me sometimes, but your salad looks great! I’d totally eat that :)

    To my knowledge I’ve never tried kale. It’s on my list but my local supermarket doesn’t carry it and I forget to look when I go to other stores around town. This massaged kale salad sounds good. Since it gets a thumbs-up from you will have to make the effort to try it out.

  9. HI Kally, I’ve NEVER heard of massaged kale….how fun! You get more tender greens, and I’d think it would be therapeutic, almost like kneading bread dough. :) Have a great day, hope your first week back after vacation isn’t too painful.

  10. I’m cuckoo for kale! I massage it for salads all the time ( have you tried avocado oil? delish ) I add kale to stews and chili and to my morning smoothie (instead of spinach). Do you have a dehydrator? I much prefer dehydrated kale chips over baked. They have the crunch but don’t crumble the way baked do.

    I just love the name Massaged Kale Salad! I am bring salad to friend’s this weekend (nutritionist always gets the veg assignment never the cocktail) and this may be my salad. I can’t wait to massage, ha.

  13. Kale is soooo good, I stir fry it in butter, oh yeah. I’m so keen to try your dish. It’s hard to find, my local farmers markets are so hit and miss with selling it. Hmmmm… Thanks for the reminder, I’m going to go hunting for some. It seems to last so long too.
