Today Has Been Fabulous

Yes today has been fabulous!

It all started with my new obsession-overnight oats.

Last night I mixed together 1/2 cup oats, 1/2 cup Voskos fig yogurt, about 1/4 cup Tempt hemp milk, and some raisins:

Not too pretty but wait until morning.

Then this morning I added 1/2 banana, teaspoon of cashew butter, and some cacao nibs for crunch:

Oh heaven-I have lived too long without overnight oats!  Too good and a great way to start a fabulous day :)

Then I headed out on a ride with these lovely folks:

Yes it was foggy but still beautiful:

We rode 25 miles up and down the coast.

And then I got to have lunch with the infamous Khrystle :)

Sade and Pepsi got to come along too:

We enjoyed a lovely appetizer of hummus and flat bread-they make the best here:

I had a glass of chardonnay:

And I ordered my new favorite-the chopped salad with no dressing.  This salad is so flavorful you certainly do not need dressing:

All days should be like this :)

  1. What a perfect day! A fabulous day for me includes no stress, great eats and fun times with friends and family.

  3. sounds like a great day to me. For me a fabulous day would most definitely include my sister. OR a great run and picnic with my hubby

  5. We must’ve been on the same brainwave for breakfast, except mine was cooked! The oat + fig combo is amazing though! Looks like a great day with the ride and the awesome lunch :)

  10. That sounds like a pretty perfect day to me. Love foggy morning bike rides and overnight oats. The problem is I end up eating half my oats before bed, haha.

  11. I am writing myself a note that I HAVE to try overnight oats! No other posts I have read made me want to try them. I mean, I’ve seen them all over the blog world, but knowing that you just tried them for the first time, and fell in love, I really think I would too!! I’m doing it soon. And you use hemp milk? I want to try that too. It’s expensive though, maybe I’ll just buy it once to try it out!

    A fabulous day is…
    1. a day with my sister
    2. a sunny day with hubby and cat-child on the patio chatting, reading, and relaxing.
    3. a shopping spree (just because I’m in the mood to shop and I need clothes that fit me a bit better)
    4. conducting school visitations in my district and seeing the kids learning
    5. cooking all day with wild abandon a number of international specialties and serving them to my hubby, sister, and brother in law

    Pick one, any one.

  16. I just love salads that have so much flavor that dressing isn’t necessary! A fabulous day for me starts with a quiet, clean, house and a cup of coffee and a little reading time!

  19. I had my SECOND ocean swim yesterday and it was FREEZING.

    Then last night went to a free concert at the park, which was a ton of fun.

  20. Ok, so those oats actually appeal to me. (I say this because I was soooo sick of oatmeal after eating it for breakfast on a comp-prep diet for so long) Do you mix all that together and put it in the fridge overnight? Eat it cold? Do tell!! I’m clueless!
