June Gloom

Good Morning Friends! Boy is it foggy here.  June Gloom has really taken hold……..Hopefully there will not be any July Gloom.

Thank you for entering my Tea Giveaway yesterday :)   Those teas taste great and I am throwing in some fun extras if you win.

And thank you for your kind words regarding my interview.  I am so shocked-I got a call back for the second round!!!!  Exciting times maybe lurking ahead for me.

So to celebrate the good news (life is too short not to celebrate small victories) , Bill and I broke out some of this:

I sipped on it while making a delicious pasta dish.

Here were the ingredients I wanted to use:

Cooked up the linguine.

Steamed the veggies.

Cut up some olives, avocado and banana peppers:

Once the pasta was cooked and drained, I added in olive oil, lemon juice, and all the goodies.

Then “melted” the laughing cow cheese into the mix.

Yum!

Deliciousness at it’s best!

Today we are taking Melanie and Dave to the airport.  Anything to get out of this June Gloom by the beach!  Hope to see some sun :)

  2. we had cheeseburger pasta last night.
    boy was that comfort food at it’s best.

    we have been having SERIOUS gloom here. it’s as icky at noon and at 5 as it is at 6 am. WHAT GIVES?

    it’s getting to me!

    yes, get out and find some sunshine!
    favorite add ins?
    it’s pasta…add it all! seriously. maybe pesto and cheese, but I like creamy things.
    veggies galore is always fun…your’s looks perfect to me!

  3. Love pinot noir. I love how you add in olives. I always forget about them. They add such a depth of flavor, especially when you start getting the different varieties. Hope you get some sunshine soon. Gloomy weather always gets me down.

  4. Nebraska if finally experiencing some dry, sunny weather! We had 9 inches of rain in my area in the first 3 weeks of June ~ very unusual! In fact, my front yard developed a “sink hole” due to our over abundance of snow last winter and the rain in June!
    Laughing Cow is a daily “fix” around here. Love that stuff!
    Great job w/ the second interview call! Can you give us a hint of what you might be doing?

  5. Laughing cow is a great add in to make a sauce taste more indulgent than it actually is! Congrats on your second call back! Can I second your “life is too short to not celebrate small victories?” So true. We’re not guaranteed tomorrow, so we might as well live today to the fullest!

  6. Hummus is a great mix-in that I never thought to do, but tastes great!

  7. I’ll throw anything into pasta- mushrooms and zucchini are a favorite, but I think that lemon juice would give something a nice kick!

  8. All your add ins for pasta looked wonderful. I love adding different veggies! The more the better. BTW the wine looked pretty good too. :)

    I’m a big fan of artichoke hearts with my pasta lately, along with either a garlic & olive oil sauce, or just good old marinara.

  11. I now need wine:) I love pesto and veggie pasta. I like veggies with a crunch, so even asparagus is fine with me. Love your mixins!

  16. I love almost anything in pasta – artichokes, olives, baby corn, edamame . . . I could go on!

  17. The pasta looks great, my favorite add ins are pesto and marinara sauces or creamy nut and seed sauces. Sorry about the gloom, hope you get some sun soon!

  20. I haven’t had pasta in so long! I love the tang that olives give to food. I need to bust out my quinoa pasta and make a bowl similar to yours :)

    I never thought to put laughing cow cheese in pasta, kinda like a fettuccini, love it!

  25. today it was actually SUNNY here from early morning til sunset..no gloom but it’s been awful..hopefully it will be over by July 1. Oh yeah, that’s now :)

    i have been MIA too.. hard to justify the computer inthe summer!!! that pasta loooks ammmmaaaaazing. yum!
    I am heading to the beach (nantucket) for a looong 4th weekend. we are supposed to have super fab weather.. so excited to relax, savor some wine, chill with my girls, read a book and soak up the sun!!

  29. love me some linguini! i had some last night too :) oh so delicoius. I love your idea of using the LC Wedges as your sauce. will have to try that soon.
