This week, I have been trying to keep up with some of my goals.
They are:
- eat more fruits and veggies-easy for me
- run twice-has not happened
- workout with Khrystle-will do that today
- and ride this weekend-will do!
So in my effort to have more veggies, last night we had a fun dinner based around this sauce:

I layered bulgur, veggies, tofu, sauce (mmmmm) and avocado for the perfect veggie bowl:
We ate while watching a new to us show called, “One Big Happy Family.”
Have you seen it? We kind of liked it.

My goal is to make (and remotely stick to) a new workout schedule. I am way to sedentary. Eat, work in a cube, eat, sit on couch, sleep = no good.

Peanut sauce is totally one of my top ten foods. I could eat it with a spoon! Is there such a thing as peanut sauce soup??? Haha

I’ve just been experimenting with Indian and Thai food – so far my best recipe is Chicken Tikka Masala – it gets rave reviews (except from my family!) every time I make it!

I just made my own peanut sauce out of almonds. I have some left…maybe a veggie bowl is just what the doctor ordered tonight.
this was a mediocre workout week too. better than last week, but it was busy and I am still trying to fit it all in!

Oh how I love roasted veggies! I have a boat load of veggies in my fridge that need to be eaten before they good bad. I think roasting them is the perfect solution.
