Since reading The Kind Diet, one of my goals has been to incorporate more grains into my diet.
I decided to try out Barley this week.
I used a cup of this kind:
And cooked it up with 3 cups of water for about 45 minutes.
It came out light and fluffy with a great chewy texture:
I topped my portion with steamed broccoli, carrots, and snap peas and this sauce:
I also added in some cannelloni beans.
Here is my finished bowl overflowing with goodness (yes there are steamed veggies and barley underneath!):
Added almonds…..did you know that Almonds are the best alkaline nut?

The tea-pot is a sure way to really enjoy the full pleasure of tea. I have a few myself, as a tea-lover. I highly recommend this style of steeping for tea enjoyment.
I haven’t had barley in so long. The kind I had was not pearl barley. It was the larger grain. It’s not bad but then, I seem to enjoy all whole, natural grains.
How did you like the barley? haven’t tried it yet. I’m kin of stuck on quinoa right now. I need to pick up the kind diet, it is going on my list.

Oh so so delicious! I love grains with all my heart and I love the idea of combining them with canneloni beans and marinara! Especially when the marinara is cheesy! I love how chewy barley is!

Before I became more conscious of my diet I never had the patience to cook something for 45 minutes, I always wanted everything instant!! Soo whenever I would eat grains they would always be Uncle Ben’s 90 second bags! Now I love cooking grains and try to steer clear from all the instant food, which can never compare to the natural!
I love the crunchiness of barley. I like it in soup especially.
I love pearl barely. I also really like wheat berries. They have a chewiness to them that I just love. They do take a lot longer to cook however.
Oh, and I’ll post a reply to your question about running with hubby at lunch on my blog in case someone else is curious – but I’ll also let you know here in case you don’t check back. We work across the street from one another and live 7 blocks from home so it’s easy to go home, change, run, clean up and get back to work.
