Bill and I had a busy weekend with all of the birthday stuff and his mountain bike race so we did not make time to do our weekly grocery shopping.
Instead we only bought a few fun items and decided to wing it for the week.
Do you ever decide to have a “cleaning out the pantry/refrigerator” week?
I think it is kind of fun because you end of making some interesting things!
Last night was no exception-I made what I like to call, a Hodge Podge Bowl.
The star of the show was this:
This was my first time buying these and I don’t think I would buy them again.
For the price they should have tasted better
I whipped up some Israeli Couscous for the base:
Baked up some vegetables:

There were yellow squash, sugar snap peas, garlic cloves, brussel sprouts, and sweet potatoes in the mix
Topped the bowl with some hummus and roasted almonds:

The Hodge Podge was a success!














That looks like a great combo! I just adore roasted vegetables.
My hodgepodge meals usually result in a frittata/omelette or something like nasi goreng that I can put an assortment of veggies in.
Gotta love that feeling of having used stuff out of the fridge rather than having thrown it out.
I am not nearly as creative as you are. Eggs and toast is usually my go to meal when I don’t know what else to make…. I know BORING.
Can’t wait to see what else you come up with this week, you always give me good ideas!!

Okay, that looks delicious…baked veggies and hummus? I’m in heaven.
I make up weird concoctions too…don’t have a favorite though!
I love this! I always say, I’d really love salads if it weren’t for all the lettuce. I often make dinners and lunches this way. I pull everything out of the fridge and throw it in a bowl.
Last night I made pizzas on these spinach pitas I got at whole foods. They’re only 75 calories per piece. I added pasta sauce, sundried tomatoes, some chicken and a little cheese. Mmmm.
Hmm… Cleaning out our cabinets usually leaves us with just grains. We really don’t stock pile anything other than herbs. So times like now when we haven’t been to the store, means we end up ordering in. As hard as I’ve tried I can’t come up with anything edible out of what we have left.

I make up strange crap all the time…to use up stuff in the fridge or to get by till payday! your’s just always looks more appetizing!
I am also a fan of soup to make a simple meal!
my cupboards are BARE and we need a 500 dollar Costco run…eek!

I love that hodge podge bowl!! I absolutely love big bowls of grains, veggies, and fun toppings- especially hummus! i also love the crunch that nuts add, texture variety is key. I’m sorry to hear that the burger wasn’t great, glad to know that before I went out and bought them!
My favorite meals are some of the odd combos I throw together on a whim!

That totally looks like something I’d do. When in doubt I make some sort of grain or pasta and pair with sauteed veggies. I might add an egg too!
I love a big pile of roasted veggies! I always try to make it to the store only once a week so the last day is usually comprised of randomly thrown together foods!
It’s too easy to make your own veggie burger. Best to make a few and freeze them rather than buying the boxed kind. Although I do like one brand…can’t think of the name??? They come in garden and orignal. Hmmm??
As for strange combos, not sure. I usually like to stick with flavors and ingredients that I can mentally taste together.

How fun! I make a lot of raw side mashes, sauces and dressings, sometimes towards the end of the week, I might toss the leftovers into a monster salad and come up with interesting flavor combos.

My most random concoctions include scrambled eggs with whatever leftovers are in my fridge…including, but not limited to, leftover daal, quinoa, random vegetables, and salsa. It looks really gross but I swear it is SO good!

What a creatively YUMMY concoction!! Recently, I made some bulgur wheat, and honestly had no idea what to do with it. I decided to add some beans, celery, onion, tomato, and a lemon juice vinaigrette. The combination turned out delicious, I had never thought of combining beans with bulgur. I also love experimenting with my oats

Oh wow, this looks like a fantastic hodge podge!! I am seriously the queen of hodge podges. Nick is afraid of me because he never knows what I will come up with next. I just so happen to be doing a “kitchen purge” this week too, so last night I made pasta. I threw together some sauce, ground beef, rice pasta, cooked spinach, and broccoli. haha, he ate it! I thought it was pretty fantastic. I also added a half of a sweet potato on the side
We have so much random food in our house we need to eat!
Sorry about the Amy’s burgers. I felt the same way about the Kashi meal the other night, for the price, it wasn’t worth it. I was lucky Nick still ate it!
I never dedicate a week to cleaning out the pantry/fridge/freezer but I should!!
