I Heart Cookies

As soon as I saw this recipe on Kris’ I Heart Wellness blog I knew I had to try it:

Of course I made some changes.  I subbed out raisins for cranberries, and mixed the almond butter with some cashew butter.  I also had to add some applesauce in because the mix seemed a bit too thick.

Maybe I need MEASURE my ingredients next time!  I am the queen of the “eyeball method.”

Here are the wet ingredients:

Banana, butters, vanilla, and coconut oil

With the added dry ingredients:

Oats, coconut, cranberries, chocolate chips, and a bit of applesauce

And yes I was too lazy to make cookies so in the pan they go:

Voila!

I Heart Wellness Healthy Bars!

They are cooking right now and smell divine :)

    bad habit. maybe I measure flour and liquids but especially the tsp and tbs of this and that…NOPE…dash here, pinch there.

    and I tweak things horribly!

  5. I am SOOO making those!!! I laughed about subbing out the raisins.. I was turning up my nose when I saw them in the recipe,,, but then read you substitiution.. girl after my own heart!!
    I am the queen of measuring.. but am always wistful to be an eyeballer…
    please share how they taste!!

    I’m the queen of measuring but when I’m cooking without a recipe I really like going with the flow.

  7. Those look great! I measure some things and eye ball other things. Just depends on the ingredient and how much I think it effects the recipe.

  8. Lookin’ good!!! I would like to try a no bake recipe.

    When cooking, I don’t measure at all. I throw in waaaaay more spice than the recipe calls for. This drives Stephen crazy. With baking, I’m more apt to use my measureing cups and spoons.

  9. it depends what and who I am baking for!! if its for myself and I knwo a an idea of what I want, I tend to eyeball (ALWWAYS with cooking) but with baking, its a bit harder to eyeball because thats just chemistry so if there is too much of one thing, it may ruin the whole recipe! I do eyeball my hoemamde protein bars thougH! I can never go wrong with them!

    the cookies look SO good and super healthy!

    I always measure. I used to love to bake (I’ve gotten pretty lazy over the years) and in difficult recipes you have to be precise. But I love these fresh, raw, vegan recipes you are posting. You can put almost anything in them to change the flavor from week to week.

  12. They look great! I tweak recipes a lot, especially dessert recipes by reducing/subbing sweeteners and oils. Surprisingly, many have been great with less.
