Do You Kabocha?

Last night I decided to cook up this lovely Kabocha squash my sis got me:

I baked it in the oven at 350 for about an hour.  The house smelled heavenly.

When it was finished and resting.  I chopped up eggplant, zucchini, peppers, mushrooms and added cherry tomatoes, and sunflower seeds to a roasting dish.

Sprayed them with olive oil and seasoned with salt and pepper.

This is my new favorite kitchen device:

I broiled all of it for about 20 minutes.

Mixed the broiled veggies with cut up kabocha squash and brown rice, flax seed, avocado and eggplant hummus:

It was delicious along side this glass of vino:

Tonight I think we will have some pasta.

I am off to pack for the weekend!

Bill and I are headed out-of-town to visit his parents.  His Dad is doing much better but we thought it would be fun to pay them a visit.

Rained Out

Today was supposed to be my first workout with Khrystle.

But we got rained out:

I kind of knew this would happen because it started raining at about 10 am this morning and never let up.

This is very abnormal for Southern California…….enough rain already!

So instead of my “torture” session, I came home and did a 20 minute power vinyasa flow class from Yoga Download.

Hello mat:

I love yoga.  Even twenty minutes of it sets me straight.  I feel so connected to my movements when I practice.  It just makes me feel good!

Now I am sitting in front of the fire waiting to open this gem with my husband:

Joanne from Older/Better suggested this so I can’t wait to try it.

Pepsi is waiting on dinner:

She lives to eat.  Hmmmm she is very much like her mother!

For me it is yoga, then cycling, and then running……
