Last night I decided to cook up this lovely Kabocha squash my sis got me:
I baked it in the oven at 350 for about an hour. The house smelled heavenly.
When it was finished and resting. I chopped up eggplant, zucchini, peppers, mushrooms and added cherry tomatoes, and sunflower seeds to a roasting dish.
Sprayed them with olive oil and seasoned with salt and pepper.
This is my new favorite kitchen device:
I broiled all of it for about 20 minutes.
Mixed the broiled veggies with cut up kabocha squash and brown rice, flax seed, avocado and eggplant hummus:
It was delicious along side this glass of vino:
Tonight I think we will have some pasta.
I am off to pack for the weekend!
Bill and I are headed out-of-town to visit his parents. His Dad is doing much better but we thought it would be fun to pay them a visit.

I love love kabocha! It’s a nice change from my usual acorn and butternut squash!
I had a very similar dinner. I roasted the Kabocha with all my other veggies and threw some on top of my greens with some feta and a couple of shrimp cut up that I cooked for my son. Love it!
That Kabocha squash doesn’t start out pretty but becomes quite a nice entree when prepared.
Something I’ll have to try soon.

Are your flax seeds whole?? Did you know that unless you grind them they will pass thru your system and you wont get any of the wonderful benefits from them?? Apparently our bodies are not able to digest them enough to break thru the hard shell…

Yes I do know about the flax seeds…..I guess I did not do the best job grinding them!

oh love kabocha but cutting it is hard for me and I cut myself too easily so I have not been buying it…but I do love it.

I usually cut the squash after I cook it-it is MUCH easier…..
The Misto is a “thingy” you can put oil in and then pump it so it will spray a fine mist.

Mmmmm, love squash though I haven’t yet tried Kabocha. On the lookout for it now. I love food but am trying to eat better and be kinder to my body – it is the only one I’ll ever have, isn’t it?
I don’t kombocha, but everyone talks about it so maybe I should be. I have a similar thing to the misto and it really is the best thing ever.

I can smell the squash roasting. That looks like a nutritionally powered feast. Love it. Although, I’m not sure you took in enough antioxidants by way of the red wine. Have more!
