On to dinner time……..
These three items were my inspiration behind my version of Taco Salad:
First I made a fabulous salad with lots of fixins:
There is lots of love in that baby…….
Then I warmed up the beans with the corn in a saucepan.
Microwaved the brown rice.
Chopped up the avocado:
Nothing says, “Taco Salad” more than cheese in my opinion:
I prefer the goat over the yellow kind.
All together now with some hot sauce on top:
Super good!

Ok, you had me at refried beans…..I love these little things. They are so wonderful mashed up with some salsa!!
Regarding the vega, I use the Meal Replacement as my breakfast because you get SO Many vitamins and nutrients from it. As a vegan this helps so much. I love the vanilla one, but everyone else seems to like the natural flavoured one.

That is a good looking salad! I have no idea what I’m doing this weekend. Which means I need to figure something out.
We are headed down to NC tomorrow for my Mom’s birthday then grocery shopping and food prep on Sunday. Good times
WOW….now that’s a salad! Weekend plans….tomorrow I will be doing the Polar Plunge for Special Olympics. Not sure of plans after that….I just want to try to not freeze to death

Amazing idea to use goat cheese on the taco salad. I love the tangy creaminess of it. Plus, the shredded mexican blends don’t really stand out in taste unless you melt them, right?

Nice, a big plate of Trader Joe’s! I love that place. I buy all of those products too, but I’ve never tried their crumbled goat cheese.
I went back to look at your China Study post, and I have some thoughts about it. Basically, having been in the field of research for the last couple years, I am well aware that for any study that says one thing, there are going to be other studies that say the opposite. I could easily (we, it would take time) do some research and fine tons of papers that say the opposite, such as dairy can help prevent certain cancers. The bottom line is that the typical Western diet includes TOO MUCH dairy and protein, but if you stick to sensible amounts, it’s fine, and we’ve been eating that way for millions of years!
Love all of the Trader Joe’s ingredients!!! I’ve actually never tried goat cheese on a taco salad, but it sounds like a delicious idea!
