Warm Couscous Salad

Tonight I came home and knew I wanted to make something with this:

I decided it needed to be a warm dinner because it was a bit cold and dreary outside.

I first made the couscous with organic veggie broth and set it aside:

Then I sautéed 2 tbsp olive oil, 2 chopped cloves of garlic, and 1 whole onion.

Once they softened up a bit, I added a chopped yellow pepper, and 1 cup of shredded carrots:

Then I added 1 cup of chopped mushrooms, 1/2 cup sliced cherry tomatoes and seasoned with salt/pepper, cinnamon, and garlic powder:

Right before serving, I added 1/4 sun-dried tomatoes in olive oil.

And steamed broccoli.  I steam the broccoli  right in the bag!

Lastly, I layered the couscous over a bag of organic spinach.  Mixed in the sautéed vegetables and topped it all with a bit of feta cheese and some pistachios:

I hated it obviously!

Now Bill and I are sitting in front of the fire with some tea:

And Pepsi is passed out snoring on her bed!

    I just love mushrooms and can taste them in this dish now!
